I came up with this the other day when I was trying to figure out what to do with chicken.
I changed this around a bit to lower the fat and calorie content by broiling the eggplant instead of frying it.
I adjusted Rachel Ray's initial recipe using margarine instead of butter and non fat milk. I also used this as a side dish instead of a main dish by cutting it in to 8 pieces.
