This is a twist on a traditional Mexican summer treat. I've cut out the sugar, but none of the flavor. You can use seltzer for and added fizz that takes it over the top. My kids LOVE it and don't even know it's not "soda"
We love our pasta here at my house. This is a way to get an old family fav in with all the flavor but less fat and more fiber than usual. Advice, always use fresh herbs and cheese. You can use much less and get even more flavor in the dish = more satisfaction!
My kids LOVE this.. I put it on pasta, use it as a dip and even put it on potatoes for a healthy potato salad. My hubby isn't big on basil so I don't use too much, you can add to taste. The baby spinach (don't use the grown up kind) give a real healthy punch that is where the super comes from.
This is a great dish I used to enjoy at a small cafe in the little town I lived in, in Spain. I've omited the cappers because I don't like them but you can add it. It serves 6 because that is the size of my family. I use Tasty Bird chicken breast tenders (couldn't find them online) that are 110 calories for 3 tenders. I also HIGHLY reccomend using baby portabella/crimini mushrooms. They have MUCH more flavor than buttons. I hope you enjoy this as much as my kids, hubby, family, friends and I do!
