I know, biscuits aren't all that healthy, but these are better than most. Some whole grain, and no baking powder with its aluminum.
I don't like baking powder, and have not been buying margerine. At the same time, I don't want all the sat fat of butter in my biscuits. I found a recipe for sour cream biscuits and made it healthier with whole wheat and wheat germ. Would also suggest flax, but didn't have any on hand.
This is good with chicken, would be very good with shrimp. To make it more complete as a meal, you could add chopped broccoli or a broccoli-cauliflower mix. (not included in nutritional information)
I used a waterless cookware electric skillet for the chicken. It cooks it quite quickly - you will have to adjust cooking times and start the chicken earlier if you have to cook it conventionally on the stove.
I would like to figure out how to cut the salt in this to a more tolerable level - but at this point I just realize what I'm getting and adjust the rest of the day accordingly...
I finally can make good cornbread! More northern style rather than sweet southern. I list 9 servings for this recipe because my corn muffin pan has 9 cute little hearts and this amount works just right! Recipe can EASILY be doubled for a larger pan, but amount per serving will depend on how many pieces you cut it in! Cast iron is best, but a well oiled glass 9x9 for the double recipe will work if necessary.
After I tried this recipe, my son has asked for it several times. We like it any meal of the day! Has a mild bite to it, nothing overwhelming. Want it spicier - add more masala/curry - or just some extra red pepper! My son likes some cheese sprinkled on top - feta or cheddar. Not included in nutritional info.
Without a lot of extra sugar, the chocolate and yogurt are the predominate flavors.
Hmm... does granola have to be sweet? Or can it be that crunchy savory snack we may want mid-day? BTW, this is not a hot spicy mix, but could be adjusted for that!
Addicting... I have made them a little healthier by reducing the amount of butter and adding in flax and wheat germ. Could also add up to 1 cup chopped peanuts, almonds or sunflower seeds (not included in nutritional information)
I made this to cut some granola that was WAY too sweet. Even with almost no sugar added, my son liked it just the way it was. Grains and seeds taste good without having to be all covered up!
Diet food - not quite - it IS mac and cheese! Compared to the original, much healthier, and if you can control portions, not that bad. For a mac and cheese that isn't baked, this is really good.
There are tuna casseroles, and then there are Sunday Supper Tuna Casseroles! Hands down the best I've ever had. If in a hurry, I have skipped the baking process. I've also served the sauce over toast, rice or potatoes. The canned cheese soup can be replaced with real cheese - about 4 oz. (sharp cheddar is good!) Hardest part is portion control because this is so tasty!
After a week of food service food, my son asked for some savory pancakes for breakfast. This is what I put together, and they were GOOD!
A 'sorta' Mexican Quesadilla. Hot if you like it that way, not if you don't.
This is a great large loaf bread machine recipe. Wonderful aroma, great toasted.
What happens to cookies when you try to make them a little healthier? I modified a tried and true favorite and came up with this recipe. Ok, it's not quite the comfort food the original recipe is, but I rather like this one!
Salt registers very high, I don't think it's that much when the beans and corn are drained and rinsed!
When I was a kid, my dad used to make this, but using half ripe and ripe tomatoes. Feel free to do it that way, or even a mix of ripeness. Gradually I moved toward less ripe tomatoes and really like their flavor.
Fajita style veggies and chicken, Indian spices. Turned out quite tasty - but be careful of the heat. Curry and cayenne can both be pretty spicy, and if your poblano is also (mine wasn't...) Add spices carefully and adjust to taste!
I listed this as 4 servings, but it could easily be consumed by 2 if you're hungry - and no guilt!
