Found this recipe in a cookbook I bought in Texas and altered it a bit. Added more veggies, less oil~ its amazingly tasty. Makes a meal in itself but can add meat or fish to the side if desierd. I had it one time with cod and once with chicken on the side so far.
I love custard and bruelee and this is a lower calorie tasty version of a major comfort food for me.
Can use regular sugar or Splenda~splenda will lower the calories/sugars.
My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. Makes 16-3" pancakes/4 per serving.
Recipe I found from Martha Stewart for light chicken parm-I tweeked it to make it even lighter. Yummy with pasta as a side dish, salad and garlic bread. I left out the flour and olive oil to cut calories and fat.
I found an easy recipe that I tweeked to make it healthier, lower in calories and fat. I have made potato soup before and its good, nutritious and can be left chunky or pureed.
I tweeked this to lower the fat content, and using chicken is better then the traditional beef.
I love cheesecake so I took several recipes and came up with this version. It is dense and tastes great, even my sons liked it. Yummy alone or with raspberries on top. Sugar free and low cal/fat. Makes 16 servings.
I tweeked this to lower calories and fat. My neice made this for me from Rachel Rays comfort foods cook book, and it was not bad cal or fat wise but I tweeked it anyway, so I could eat even more of it. It is really good and full of healthy goodies. Nice with toast or fresh bread on a cold night, or when you need comforting.
Can use all broth and no wine if want to

I mixed several very healthy things together and made a salad that is packed with protein, and low fat. Makes LG dinner salad or 2 servings of a side salad. Jam packed full of freggies.
Risotto takes awhile to cook as you have to stay with it while you stir and add broth.
Tweeked recipe from Sunset Magazine, I used Olive oil and lower fat land o lakes butter and lessened the amounts of fats.
I tossed it together using leftovers and vegies before they went bad. I preboiled the beans in water on stove for 1 1/2 hrs rinsed and separated skins out then put in slow cooker with veggies to cook all day.
Found this in Simply Delicious magazine and tweeked it some. It is really tasty and good way to get lots of veggies and protein. I tried it with frozen mixed berries as well and it was yum0.

My take on greek spinach/feta dish made for healthy eating and breakfast/brunch
You can add bell peppers to this as well I do for hubby, but I am alergic to them so dont eat them.
Lots of fruit, fiber, low fat and totally yummy! can use less honey or substitute with sugar. I used Haggens brand raspberry soy sorbet but any one will do
a low fat/cal twist on Pizza High fiber and protein too.
Nice flavor and good way to get lots fo fruit in the morning or lunchtime.
I keep trying to find new ways to eat my oatmeal, and get more fruits this one is really good.
Fresh or frozen blueberries makes this a lovely purple color and nice flavor. I use 1 TB jam and 2 TB soy milk but can add more jam if want it sweeter. I use molly mc butter sometimes instead of the butter my mom always put in my oatmeal. Use sugar free jam if sugar is a concern.
Found this recipe on Foodnetwork under healthy choices. I use the vanilla soy milk and added raisins sometimes. It is very good and could be used with any fruit and jam. I plan to try blueberry. If Diabetic use the sugar free jam and fruit yummmm 0
So good it goes fast, tastes wonderful and is a big hit with whole family. Make only one batch at a time, looses something if you double recipe.
my Neice made this for me as a comfort food it is very good and calories and fat are not bad. When I make it I will use the olive oil spray instead of canola oil. Recipe is one she got from Rachel Ray comfort foods.
This is one of my very favorite recipes from Rachel Ray-30 min meals. I made this several times the way she did it, cal 569 fat 46g. Needless to say I have revamped it. Her recipe is called Scallops Bonne Femme, at Food network.
