This is adapted from a coworker's recipe. His original recipe calls for a small amount of leeks, 3 stalks of celery and 2 cans of different types of beans, and a cup of cabbage. I've made adjustments here to accommodate my IBS and personal dislike of leeks, subbing in chickpeas and using celery salt, as I dislike the texture of celery. It's pretty simple, and makes for a great batch meal for those of us who work strange hours to portion off.
I was never a fan of guacamole until my friend gave me this recipe. The added textures of the tomatoes and onions combined with the earthy zest cumin gives it makes this one of my favourite treats. I serve it with multigrain tortilla chips.
A quick and simple salad, suitable for vegetarians. To bulk it up, toss in grilled chicken breast if desired. A personal favourite of mine!
