Sautéed Ratatouille

This ratatouille takes a bit of time, but the deep, rich flavors are worth the effort, and it yields enough for delicious leftovers. Try it in a Provençal Vegetable Tart or White Bean & Ratatouille Gratin.

Eggplant Ragout with Tomatoes, Peppers & Chickpeas

Broiling the eggplant first helps it keep its shape in the stew.

Thai-Style Stir-Fried Chicken and Basil

If you like, finish this chicken stir-fry with a mix of fresh cilantro and mint instead of basil. Serve over cooked basmati or jasmine rice.

Spaghetti with Creamy Braised Garlic and Leeks

Braising the garlic in this recipe takes away some of its punch, rendering it sweet and ultratender.

Sesame Noodles

You can make the sesame purée several hours or a day ahead to let the flavors marry, but whisk in the water just before serving for a smooth, creamy consistency. The noodles can rest, cooked and tossed in oil, for half an hour, but don't dress them until ready to serve.
Serves six as a main dish; eight to ten as a side dish.

Raspberry Lemon Pudding Cakes

"This light and tangy lemon dessert satisfies my longing for lemon pie," said reader Jeanette Hennings about her original version of this recipe. We added loads of berries for a more summery take. The tender berry cake rises to the top, and the creamy lemon cake sinks to the bottom.

Sage-rubbed Pork Tenderloin with Sage Butter

Brown these tenderloins over high heat, then finish cooking on a cooler part of the grill. Drizzle with a simple sage-scented sauce. Prep and Cook Time: about 1 hour.

Balsamic-Glazed Lamb Chops

Tender lamb chops take on an elegant shine when marinated with tart-sweet glaze. Once again, a few simple ingredients do a job that's dressed to impress.

Chicken Stew with Olives and Lemon

To save prep time, cube the potatoes or mince the garlic and capers while the chicken browns. Then, while the stew simmers, you can chop the parsley and juice the lemon.

Banana Almond Cake

From Sunset Magazine: A bag of ripe bananas inspired Jan McHargue to create this coffee cake. You can enjoy the banana cake with its spicy brown sugar-almond topping and filling for brunch, with coffee, or for dessert.

Caramelized Vegetable and Meatball Soup

This soup is built on root vegetables roasted until sweet, dense, and crisply browned. Roast meatballs at the same time, pour in broth, and you have soup straight from the oven. Warm some bread alongside the soup while you're at it.

Pasta Fra Diavolo

Great recipe from Weight Watchers cookbook. You can prepare this spicy sauce "of the devil" ahead of time, but it's best to cook and serve the pasta last minute.

Spaghetti & Homemade Meatballs

Hearty turkey meatballs in a rich Italian tomato sauce over traditional spaghetti.

Buffalo Burgers with Cheddar Cheese

Lean, mild tasting buffalo meat is an excellent substitute for ground beef. It's high in iron and low in cholesterol. If your supermarket doesn't carry it, try your local butcher shop.

Chicken, Bacon, and Brie-Cheese Sandwiches

A truly satisfying flavor trio. Notes: You can also try this sandwich is great with thick roasted red pepper slices (roast your own red peppers for even more flavor). Also, try adding avacado. Hint: great with just a side salad.

Buffalo Burgers with Greek Cheese

If your craving a burger, try this buffalo burger. Buffalo is a much healther option than beef and this is definitely a meaty burger. Best part is that the greek cheese has great flavors and you don't even need ketchup or mustard! Goes great with a side of asparagus.

Baked Chicken Parmesan

Another great recipe from Body for Life. This is easy, quick and tastes great. Definitely a good after work meal!

Flank Steak Marinated in a Soy Ginger Sauce

This is a favorite of mine that I found in the Eating For Life Cookbook. I absolutely love this recipe because it doesn't taste like it would be healthy, but it is. Hint: flank steak is a tough piece of meat because it is so lean, the longer you marinate the more tender your meat will be, so try to marinate it overnight.

Herbed Mashed Potatoes

In this version of mashed potatoes, we bake first rather than boil - perfect when you're already using the oven for an accompanying roast. Baking the potatoes before mashing also yields a somewhat airier, fluffier texture.

Very Good (5 ratings)

This is a gerat, quick after work receipe, it really can be done in a half hour! If you can't find, don't like, or are simply looking to save money you can substitue the shitake and other wild mushrooms, with cremini, portebella or any other mushrooms you like. Also, if your looking at budget constraints you can substitue parmesean cheese for the gruyere! Enjoy!

Spaghetti Carbonara

Love this dish for its short cooking time. Just add a green salad or seasonal vegetable and the meal is complete. Included are some variations to keep the recipe interesting in case you find yourself making it over and over again.

Notes: The heat from the hot pasta partly cooks the eggs. If you are concerned about eating raw or undercooked eggs, use 1/2 cup pasteurized eggs in lieu of fresh.

Incredible! (1 rating)
Roasted Red Pepper-Tomato Soup

Guests can sip this festive, zesty soup from small cups or glasses. Notes: Pimentón de La Vera is a Spanish paprika that adds a smoky, sweet intensity, but Hungarian or regular paprika work too. Prep and Cook Time: 30 minutes.

Whole Wheat Pizza Dough

This dough makes enough for two pizzas, so you can freeze half the dough for another day. If you freeze it, thaw it in the refrigerator overnight, or on the counter for 1 1/2 hours. Unlike other bread dough, pizza dough needs to rise only once. After rising, simply punch it down, then let it rest for 15 minutes before rolling or stretching to the desired shape. If you like, you can let the dough rise in a floured zip-close freezer bag in the refrigerator overnight. You'll find it easiest to roll out or stretch dough when its room temperature.
