This is my husband's favorite casserole and the only thing he will eat the leftovers. To make it hotter, use plobanos, anaheims, &/or jalepenos instead of bell peppers. You could also make this with ground turkey or chicken, but the nutritionaly info is for beef.
I actually adapted this from another recipe I got off SparkRecipes. I add more veggies so I could increase the servings. I needed to feed more people.
I just make this for my kids, so I can get extra fruit and dairy into their picky little mouths. They seem to like it.
