Asian Style Chicken Vegetable Pasta

I tried to recreate a recipe for a dish I purchased at a Warehouse Club. I'm pleased with the results. It's a complete meal in one dish, easy to prepare in batches and freezes well.

Strawberry Delite

My favorite strawberry recipe was laden with fat and carbs. I decided it didn't need heavy whipping cream, sweetened condensed milk, and full fat cream cheese. My version has the same texture and great taste without the guilt.

Toasted Pecan Pancakes

I love this recipe cooked as either pancakes or waffles. While I have all the ingredients out, I fill individual ziploc bags with all dry ingredients for one recipe then label adding list of wet ingredients to the label. When I'm ready to have them again, I just add wet ingredients and cook.

Double Chocolate Fruit Smoothie

Get your chocolate fix and add fruits to your daily intake while you enjoy this smoothie. It's wonderful for breakfast or after a workout.

I added Whey chocolate protein for my gym trainers, flaxseed meal added would boost Omega 3 consumption. Neither of these are included in the nutritional content.

Okra, Tomatoes, & Rice

My youngest sons fought over a piece of okra from this dish when they were toddlers. Packed full of healthy delicious filling ingredients, it's a great side dish or add cooked lean meat for a complete meal.

I use fresh vegetables when they're available, otherwise substitute with canned or frozen.
