This is my version of Tuna Salad.. I try to keep low in carbs and saturated fat.
I don't always use 2 whole eggs.. it's more like 1 and 1/2 eggs
I had a ton of tomatoes and bought salmon on sale. Having never made salmon before I surfed the internet looking for an easy salmon recipe that had tomatoes.. and that looked healthy and this is what I found on Simply Recipes... I made it that night and it was delicious! And I just had to share it with others! Enjoy!

I found these recipes on SparkRecipes and they all looked so good I just had to add them to my recipe book! I tried a few and they were as good as they sound!
