This is the best cornbread recipe I have ever found. It is adapted adapted from The Voluptuous Vegan by Myra Kornfeld. I highly recommend this cookbook for anyone interested in vegetarian or vegan cooking. For those of you on Weight Watchers, one large piece is 4 points. Worth it! Consider making this with the 1-point "Vegetarian 'Beef and Bean' Chili" for fantastic meal.
This vegetarian chili is so good, you will never miss the meat. Adapted from Weight Watchers recipes. Should be about 1 point per cup. For just a few additional calories (or points), top with 1 Tbsp fat-free or low-fat sour cream, low fat cheddar cheese, green onions, salsa, or any combination of the above.
This is from the cookbook called 1,001 Low Fat Vegetarian Recipes, 3rd Edition. I made some modifications by adding Soyrizo meatless chorizo, sour cream, and additional tortillas. It still falls within the 'reasonable range' for most dieters, and it tastes even better.
I took the Brown Rice Custard breakfast recipe that was listed as the Top 10 for the week and turned it into a chocolate dessert. You could add cinnamon or Torani Sugar-free Hazelnut Syrup to give it a different flavor without adding any calories.
