Simply Potatoes' Mexican Potato Casserole

This is the recipe from the back of the bag. I am adding it here to calculate nutrtional information only. Instead of using 12 oz chorizo or Italian Sausage - we used a combo of Morningstar Crumbles and chopped up black bean burger patty. Also, did not have skim cheese - but obviously could use that to decrease calories.

Turkey and Rice Stuffed Peppers

Recipe adapted from Jasmine Rice-Stuffed Peppers in Cooking Light August 2006.

Large Bell Peppers stuffed with a mixture of ground turkey, turkey bacon and rice.

Can use any spices to flavor - I used smoked paprika, red pepper flakes, garlic salt and herbs de provence.

Chicken Milanese

Modified the Pork Milanese recipe from Women's Health - June 2008. When I made this recipe, I made my own breadcrumbs out of toasted whole wheat bread that I put in the food processor. Served with the arugula and tomato salad mixed with olive oil and lemon juice. I cut my chicken breasts into 4 oz sizes to make sure that I have 4 4oz servings.
