Dried cranberries (or other dried fruit) can be substituted for the fresh cranberries, if the fresh are not available.
Noodles with pork and vegetables. This is my friend's mother's recipe.
There are two types of pancit noodles; Canton is made from wheat flour and Bihon is made from rice flour. The same recipe can be made with Bihon noodles which are lower calorie. Canton noodles have coconut oil in them, and that raises the calories.
Sweet and rich in flavour, tender chunks of white meat chicken with red potatoes, sweet potatoes, cauliflower, and snap peas in a golden sauce.
The starting recipe is from an old recipe card from a Penzey's store, I have tweaked it to add more veggies and brown rice.
No need to add syrup. Whole grain french toast with the maple sweetness baked in.
Chocolate Muffins made with black beans and sauerkraut that pass the kindergartener test. (The recipe used to be titled Healthy Chocolate Cupcakes, but since I don't ice them, my son calls them muffins instead. They are more muffin-y than cupcake-y, so I have changed the title)

Using buttermilk gives the flavor of sour cream without the extra fat and calories.
Using a potato ricer (it is like a very big garlic press) removes potato peeling from the process.
After much fiddling around, we found a combination of textures and flavors all my kids will eat as well as store bought nuggets.
