I changed this Saving Dinner cookbook recipe to make it vegetarian, and I think it is great.
I have seen similar recipes in cookbooks, but I got this one from a friend of mine. Easy, quick, and yummy.
My daughter came up with this yummy low-carb variation for me. And it is really good.
This is a slightly lower-fat version of a recipe I found in Fix Freeze Feast. It is a very hearty soup that the whole family enjoyed. Good for company, too.
