My hubby's favorite enchiladas.
I made a few alterations to the Betty Crocker recipe.
I made this recipe a LITTLE lighter, using GV Cardio Choice spread instead of butter, and 2 four ounce chicken breast.
This is a delicious recipe, not incredibly healthy, but it's one of my hubby's favorites. It can be made a little leaner by using ground turkey, lower fat cheese, and reduced fat biscuits.
I took this recipe from a Campbell's cookbook. The only changes I made were, instead of using 2 cups of chicken, I used 2 chicken breast halves, cubed and I used 2 cups of broth rather than 1 3/4 for moisture.
I tried to recreate the Rib Crib's smoked chicken salad, since there are no nutrition facts on their website.
