I've served this with garlic mashed potatoes or rice and it's always been a favorite.
One of my childhood favorites. My Nana learned it from her mother-in-law in the 1920's. She used 6 bacon strips fried crispy and then sauteed her onion in some of the fat; I've made it a little healthier with the bacon bits and sauteing the onions in a pam-sprayed skillet.
I found this at my local Fry's Marketplace. The Mediterranean Seafood Grinder and Chipoltle seasonings were both from there. We've also substituted Fry's steakhouse seasoning grinder for the Mediterranean Seafood Grinder and it tasted great. I've also substituted an olive oil cooking spray for the olive oil and simply sprayed the skillet lightly.
From my friend, Sarah -- this is oh so good!! You may substitute seafood for chicken.... prawns, scallops, calamari, abalone also you can use pre-made margarita mix with the Jose Cuervo. If you don’t have the triple sec and tequila. You can also use Pico de Gallo to save on chopping.
