I realize there is no culinary epiphany here, but I needed to add it to the database for tracking all the calories and nutrients as I eat this several times a week. I was impressed with how healthy and nutrient dense it is.
This is a really easy salad you can take to work or have for dinner. Everything is raw and fresh save for the chickpeas. It is also provides tons of protein and more than your daily supply of Vitamins A and C; plus tons of the various minerals.
It is also vegan and gluten free.
This is a simple smoothie I make just about every day for breakfast. You can alter any of the fruits listed. Just don't throw in dairy products as it will make it less healthy.
This is a classic indian dish of spinach and potatoes.
