This recipe makes 4 sandwiches.
I toast the bread to make it even more flavorful.
I named this Monster Salad due to it's size. When all ingredients are together, it is a rather large salad. I like a filling lunch. :) And it keeps me full until dinner.
This salad can actually be split in smaller portions for a lighter lunch or as a side salad..
IMO, With the different flavors there is No need for salad dressing....
I put that this serves two....it may serve more depending on appetite or if you have something in addition to this. Serves two if this is all you have for dinner.

Serve alone or over pasta or brown rice.
This is a test recipe....hope it turns out good...
I got this recipe off of Fatfreevegan.com and modified it slightly adding more peppers (green, red, and yellow) and doubled up the mushrooms.
This kinda tastes similar to pumpkin/sweet potato pie -- but with different texture.
This is good as a side plus I have even just had it for dinner with brocolli
So good, you don't realize there's no meat. :)
