This is a quick side dish or use as a lunch dish along side a small salad or some fruit. Use low fat and low sodium cream of chicken soup to make it healthier.
This has always been a favorite of mine. It can be eaten for breakfast lunch or dinner. I use it on toast but I have also used it over mashed potatoes.
I am using turkey breast halves for this recipe. I also removed the bone and skin to lower the fat grams.

This is my calculations for an omelet I ate ate Ryans Steak House. There website doesn't show the actual nutritional value for the omelets...or I just couldn't find it. I figured with it being a resturaunt it would be high in fat and calories...I was right. But here it is anyway.
Low fat, low calorie side. If using low sodium chicken broth or bouillon then it becomes lower in sodium also.
The sodium can be lowered if you use sodium free chicken broth but I used what I had in my pantry.
A twist on scalloped potatoes
I used a left over grilled turkey burger (4oz) on this pizza and it gives it a little more flavor.
The recipe I adapted this from has Tuna (about a 5oz can, drained) in this. If you want to make it with tuna you need to add the nutritional values for that.
This is what I came up with for an omlet and decided to make it in my sandwich machine.
