Lisa's Simple French Onion Soup

This is a heaping single serving of french onion soup that can be easily divided into two servings. The nutritional information is for one serving. Simple and easy to prepare. Far superior to canned versions. Great for the winter months....I usually sprinkle parmesean or add a slice of reduced fat provolone on top. (Cheese is not included in the nutritional information)

Tzatziki Sauce

This is a great gyro topping and tastes great as a dipping sauce for pita bread or chips

Sweet and Spicy Chicken Tenderloins

These sweet and spicy chicken tenderloins taste great paired with brown rice and veggies

* Broccoli and scallions are a great addition

Lisa's Chicken Spinach Enchiladas

This entree is especially cheesy! The sodium content is high - next time I will sub salsa for low sodium and will only use half of the seasoning packet.

Suggest using reduced sodium salsa to reduce sodium count
Need to adjust chicken breast weight when different from amount specified

Supreme Squash Casserole

Low calorie and low fat. This dish is very rich and satisfying. You can substite egg beaters for eggs to lessen cholesterol

Slow Cooked Chicken Chili

Unbelievably good. Goes great with a cup of rice or baked tostitos! This meal can be cooked on the stove top as well.
