Based on a picture I saw on an image collection site, "Bird Nests" are cups made of seasoned shredded potatoes and filled with beaten egg and cheese!
I was ready to put it in the oven when I realized I didn't have eggs! Online said, for casseroles, I could use 2-3 tbps of oats, so we'll see what happens.
I also didn't want to shred two sweet potatoes, so I used a bag of pre-shredded white potatoes.
I adapted this from the recipe of the same name on AllRecipes *http://allrecipes.com/Recipe/
I wanted to make Mango bread but had no eggs! Turns out very moist and not overly sweet. Dab a small amount of butter on your slice!
Keeps for 2-3 days.

Makes about 15 porcupine balls, depending on how big you make the balls!
Loosely based on the Taste of Home recipe, but kind of thrown together with what I had around the house :)

Makes 12-1cup servings, or 24-1/2cup servings.
Taste of Home had a Meatball Sub Casserole recipe in their April/May 2010, but we like to eat healthy and with the original's 650cal - 39gFat - 43gCarb - 29g Pro per serving it was NOT that. So, I altered it to fit our healthier tastes. Please note that the servings are based on the fact that 7 slices of bread fit in my 13x9, and I happened to have 14 meatballs from my 1.3lb of ground turkey. Yours may vary slightly.
