The key to this soup is how you cook the carrots. They are roasted under split chicken breats, soaking up all the yummy flavor for the chicken.
Made without Mayonaise or Dairy, this is a cool, creamy paleo/vegan friendly salad dressing!
This is my own semi-homemade recipe based off my attempt to stretch a bag of Trader Joe's Chicken Chow Mein. I added the frozen vegetables we prefer, but you can add anything kind you want, I should think. I also added more chicken (I used a can, but you could use leftover cooked at well) just to up the protein for the husband.
I found a recipe for homemade refried beans, using a slow cooker, sans the frying. I added in 1 pound of carrots because I didn't know what to do with them, and they were going bad. It worked beautifully! You can't taste the carrots, and it increases the veggie quotient without increasing the calories.
