the recipe called to stuff chicken breast, but I had the perdue thin breasts, so I filled them and rolled them, hubby has high blood pressure, so we didn't add salt, but the original recipe calls for 1/2 tsp during saute
I had three small chicken breast halves that I needed to use up so I threw this together. The sodium should be a little lower, I drained and rinsed the kidney beans before I added them
You could use non-fat ricotta and reduce the fat or a smaller banana and reduce the calories, but I was working with what I had so my fruit wouldn't go bad. I'm sure vanilla extract or some other would work as well, actually no extract would probably work since the fruit cocktail juice is poured over the ricotta and gives it some sweetness
I'm trying my best to change my recipes up so that my husband doesn't have to worry about his sodium intake (at home at least)
