In a medium saucepan cook mushrooms in hot olive oil till tender. Carefully add water to saucepan, Stir in parsley, basil, salt, oregano, and pepper. Bring to boiling; remove from heat. Stir in couscous and cover. Let stand, covered, for 5 minutes. Stir in chopped tomato and serve immediately.
Makes 4 servings.
Cook green beans in water till tender (about 8 minutes). Drain and cut into bite size pieces. Set aide in a covered bowl to keep warm.
Chop garlic and onion and saute in olive oil for 2-3 minutes. Add sliced baby portabella mushrooms and cook for another 5 minutes, stirring frequently. Stir in garlic pepper and salt. Remove cooked mushrooms from heat, combine with green beans. Serve immediately.
