Easy mac & cheese dish-- hearty enough for a main dish. This requires NO pre-boiling of noodles, so while it bakes a long time, the prep work is super fast.
Adapted from a recipe in Eating Well magazine-- I reduced sugar, added some nuts, and simplified the process by making squares.
The next time I test this out I will likely further reduce the sugar b/c even these were too sweet.
Variation of a recipe from another user on sparkpeople-- makes a 1.5 lb. loaf.
Adapted from Cooking Light, December 2007-- Spicy, smokey, and warm-- perfect cold weather food.
Throw it in the crock pot and it's spicy, tasty, makes several servings, and is ready to go!
Quick to toss together-- very high in protein and very satisfying on a cold night.
If you've prepared the squash in advance, the rest of the soup comes together quickly. Great fall flavors, and due to the squash, it has that "bright orange" color that kids love. The light cream cheese adds a cheesy taste, and it both has the squash taste, *and* a bit of a taste of macaroni & cheese.
Adapted from a WW recipe-- this uses creamed corn and buttermilk to create a moist, slightly sweet corn bread.
Lightened up comfort food--easily adaptable to vegetarian. Serve with cornbread for the full effect.
Quick to throw together-- vegetarian-- good for those who don't normally "like" vegetarian entrees
Delicious crock pot recipe-- fresh sage, fennel, and garlic make this whole dish smell lovely, and it is a great way to get in lots of good protein and fiber in one hearty entree.
Somewhat make-ahead. Family will love this, and it's a good intro to meatless meals where no one will miss the meat!
When the tropical fruit appears and you want to do something totally different... This is a bit spicy, which we love. Can also be (easily) modified for grilling-- simply grill the chicken w/ the rub, and serve with the fruit and veggies grilled as sides.
Throw together in moments-- works with a variety of other fruits in much the same way. A quick way to use fruit to make a relatively healthy dessert with pantry staples.
Based off of a recipe from the book, Saving Dinner (by Leanne Ely) this recipe can easily be doubled, and the non-dairy ingredients split into two. Then the other half can be frozen and later thawed-- to make another meal. We buy the 1.25 lb. packages of ground turkey breast and use that to make 2 batches of this recipe. This is one most kids like as well.

Tweaked version of blueberry muffins from Cooking Light. These come together quickly, and are perfect for using summer blueberries.

A great veggie chili *or* a filling for burritos. (Modified from a Moosewood recipe)
Adapted from a Moosewood Collective recipe, these are basically a version of baked beans with flair. Filling enough to be a main course with a sweet potato on the side and a green salad.
This makes a lovely bundt cake that is a great dessert to share. It's great as is, or you can serve w/ a bit of whipped topping, sorbet, or a fruit sauce would also be light and good. For those not used to the ginger, it can add a bit of a kick, but my family loves the flavor. If you can find crystallized ginger in bulk bins near you, you will save a bundle. The toughest part is grating the ginger-- otherwise the cake comes together fairly easily. I tried this recipe as is the first time, but I imagine you could cut the butter in half and sub in some applesauce without massively compromising texture.
This soup is great with homemade bread-- rich with fresh seasonings, and comes together in a snap. Most of the cooking is just unattended simmering one the ingredients are toghether
Inexpensive ingredients combine to make a delicious-- and filling-- dinner for 4. This is also kid-friendly-- the potatoes make a base for the tomatoes and mozzarella that are very comfort-foody, while being healthy. This is lighter if you use whole wheat pastry flour in the recipe instead of regular whole wheat flour. We also leave the peels on the potatoes (it's faster that way, and more nutritious), but if you prefer the texture, you can always peel the potatoes first.
Individual servings, separates into layers as you bake-- tart lemon pudding on the bottom and a spongy cake on the top.
Delish-- Cooks for a long time. Better if you simmer the beef the day before, and then the next day cook in the veggies so the flavors meld.
