Taken from the back of the Hatch Green Chile Enchilada Sauce. Great New Mexican cooking.
Can add extras to your liking. Faves include 1 cup shredded sharp cheddar or 3/4 cup frozen blueberries, thawed, pressed, with juice.
These worked for me at 7000 feet. If you're under 3500ft, add 1/4 tsp baking powder.
This is not health food, but it's great for parties and one won't hurt you.

Makes 2. One with sausage for me. One without sausage for my husband.
Of course most of the coating is not eaten since it never gets on the chicken, but it's hard to calculate just how much is missed.

As listed is for 2 servings. Can be multiplied or divided as necessary. Easily vegetarian by substituting canola oil for lard.

My husband got me to eat salmon with this recipe and now I love it. Use wild Pacific Salmon if you can get it.
I've had trouble finding a white chili without beans. At my senior Geography field camp, my prof made this and served it to me without garbanzo beans. I added corn myself to give it a little something else.
