Stuffed Zucchini Boats

1 lb 93% lean ground beef
1.5 tablespoons olive oil
1 medium onion, diced (about 1 cup)
2 cloves garlic, minced or crushed
2 tbs fresh mint leaves, chopped
3 medium zucchni, about 1 pound
7-8 oz plain tomato sauce
6 tablespoons of grated parmesean cheese

Cranberry Chocolate Oatmeal Cookies

This is a full-fat treat for when only the real thing will do. Instead of a traditional chocolate chip cookie, this uses oatmeal cookie base to ensure at least some fiber in the mix. Instead of a whole cup of milk or semi-sweet chips, use half dark (bittersweet) chocolate and half dried sweetened cranberries. These are sweet, chewy, and chocolate treats!
