This soup can be adapted to any type of vegetable, red pepper is just my preference.

Great for the fall or winter... or anytime you can find the squash. Good for just about any similar squash as well.
Delicious! Not quite how I remembered grandma's, but definately one I'll make again. Next time I'll add an onion.
I remember mom making this out camping for us on occasion, we loved it. Simple to make, and yummy. Not horribly unhealthy for an occasional treat.
My god these are horribly unhealthy but I love 'em.
Next time I will try with turkey sausage instead of pork or look for reduced-fat sausage.
Good with fish and chicken.... but SUPER unhealthy. Make this a very rare treat or slim it down!!! (Entered for my own use)
Basic cheese/chicken/olive enchiladas. Not really low-fat but not horrible either. Can lighten up with lowfat cheese - I entered it the way I made it.
Oh so good, we loved 'em and it makes a LOT of food. 4 large portions or 8 smaller ones.
