This is a moist and delicious carrot cake with a hint of orange. Very much like a 'real cake' but grain free. This is low refinded carbs. It is kind of labour intensive but worth it if you need a cake fix!
Very adaptable, any veg could be used in place of the carrots. Pumpkin, zucchini etc., since the vegetables are pureed first.

This is the basic recipe, add herbs at will!

There are unlimited variations, just use your imagination and remember to add to your intake calculator:
For an herbed bread: add small chunks of sharp chedder cheese, a TB of crushed thyme, a Tsp of crushed sage, a tsp of oregano or beebalm, small handful of fresh chopped Rosemary, fresh ground black pepper to taste and maybe some coarse salt on top. You can even add some green onion, broccoli or nettles for extra panache if you like.
Sweet Bread: add cinnamon, honey, cardamom, vanilla and even some fresh fruit like sliced strawberries.
Pancakes: just make the batter thin enough to spread on a hot cast iron pan or griddle. Unsweetened applesauce is nice in the pancakes instead of water.
The recipe will work for a regular sized pie tin or small loaf pan. Double the recipe for a more normal sized bread loaf pan (remember to double the nutritional intake!)

It is very adaptable to whatever whim you might have and however hot you might like it. I use Horseradish Mustard, double the tomato paste and a little extra water. Also, if you don't have Tamari regular soy sauce (or low sodium) works just fine.
Mix all together, add chicken and let stand for at least a couple of hours (best if over night). Super easy as it only takes 5 mins to throw together!
