Great flavor for any time of year. I like to make a small batch when I roast a chicken. I think the calorie and fat count comes out a little bit higher than reality in this recipe because I drain and rinse the artichokes but can't really account for that in the ingredients.
This is a "use everything in the pantry" type of salad - so refreshing on a hot day!
Cool and colorful salad that's out of the ordinary and has lots of protein!
These are fantastic grab-and-go breakfast muffins from Cooking Light magazine. Can be made up to one month in advance, freeze in heavy duty zip-top bag, then let thaw at room temp and microwave for a few seconds to heat through.
Here's a lower fat and reduced calorie version of everyone's favorite that doesn't TASTE like all the good stuff is missing! And if you compare these nutrition stats to the packaged version, you'll never reach for that blue box again :-)
This is a light version of what would normally be considered a diet no-no - creamy potato soup. Along with a salad, you could easily have a sinfully decadent dinner for under 500 calories.
Yes, I know, this is NOT health food. But sometimes, you really just want to splurge a little and how else can you have cool, smooth creamy peanut butter pie for less than 300 calories? Save up a few calories during the week and enjoy!
Chinese comfort food! This is sometimes called "soy sauce chicken" in restaurants, and it's great with a side of broccoli and brown rice.
Yummp twist on lettuce wraps! You can prepare the sauce up to 3 days ahead and the rest up to one day in advance. Remember to use Lite or low sodium soy sauce!
This is a surprising twist on tacos, and can be made more authentic by using ground lamb in place of the turkey.
Crispy, creamy salad that's not the ordinary limp cabbage floating in sticky-sweet white goo. The sweetness and spicyness are easily personalized by adjusting the amounts of Splenda and hot sauce.
Here's a super easy fruit dip that goes great on fresh berries or apples
Why must EVERY smoothie recipe include those dastardly bananas? I know, you all love them, but UGH! Here's a cool and fizzy treat that works great for breakfast and snacks, and you can change the fruit and syrup as desired.
Modified from Tast of Home's Guilt-Free Cooking. So low in calories, you can have 2!
Another Cooking Light favorite! This is soooo good when you are already grilling chicken or fish, but you can also make it without having to light up the grill by using a panini pan indoors.
Another great recipe from Cooking Light! If you don't have an ice cream maker, see the instructions to make an iced tea granita instead.
Here's a recipe I found in Cooking Light magazine - you can actually have some chips and dip for about 100 calories!
