Squash and Potato Bake

I love this for breakfast. or at lunch with a salad.

Zuccplant Parm

Layers of eggplant and zucchini with homemade marania sauce and creamy ricotta filling.

Eggplant and zucchini are not fried, but baked before putting into casserole.

Also, the marinara sauce I used is homemade, with not salt added.

Hannukah Brisket

This brisket is soo good. I like serving it with potato/squash latkas.

The gravy is made from the vegetables and juices.

Enchilada Casserole (Vegetarian)

The sodium level in this dish is a little high, The casserole is great if you need to leave off the enchilada sauce. There are other brands available that are lower in sodium.

Cheese can be eliminated or changed to a shredded cheese. We like Mozzarella the best.

Tofu Cup Cakes

These came out soooooooooooooo good. I can not believe how fantastic even with out frosting.

"Stewed Chicken"

I re-wrote this recipe from one my mother used to make. She used the whole chicken frying it in chicken smaltz (rendered chicken fat - like lard). I wanted to make the same dish only heart healthy.

This still is a family favorite. We like it over noodles or rice.

Mom's Cornbread Dressing

This is very close to what my mother used to make. I stuff it into roated bell peppers or acorn squash and serve with a salad.

Fettuccini Alfredo with Broccoli

I saw this on a cooking show minus the broccoli. It looked fantastic, so thought I would try. Let me know what you think.

Chili Bean Burgers

These are the best. Big burgers. I like to top my burgers with carmalized onions, bell peppers and mushrooms.

Veggie Omelete

I love this for breakfast, lunch or dinner. I usually serve the onelete on toasted english muffin.
