Pagano Family Holiday Pumpkin Butter

This recipe makes 6 pints or 12 half-pint jars. Serving size is 1 tbsp of pumpkin butter. Great to jar and give as gifts!

Mock McDonald's Fruit and Maple Oatmeal

Make your own filling fruit and maple oatmeal at home. you can reduce the calorie count by 60 if you use regular Splenda in place of he brown sugar blend OR cut out 40 calories by substituting Sugar Free Apple Butter or Sugar Free Pumpkin Butter (20 calories per serving) instead of the Splenda Brown Sugar for a nice Autumn twist.

Taco Salad Base

Excellent base for taco salad or Mexican-style dip.

Si Si Cilantro Dip

DO NOT use low or fat free mayo or sour cream unless you desire to have your taste buds scorched off. The dip mix is very spicy and the added fat in the may and sour cream helps to absorb enough of it so that the taste is pleasant and not insanely hot.

Dry Chili Seasoning Mix

1/3 of recipe is equivalent to 1 packet of dry chili seasoning mix. Omit red pepper flakes for a less spicy mix. Increase flakes for more heat.

Mandy's Best Chili

This is by far my favorite chili. These are the quantities I use to make a double batch. Any leftovers you may have are great in enchiladas. Recipe also freezes well.

Make sure you use the McCormick mix. The generic brands don't taste quite right.

Serve with chopped onions, shredded cheddar and tortilla chips for a delicious treat!

Cinnamon Biscuits

This is my Sunday morning tradition. Homemade rolls from a basic biscuit batter that are easy and delicious at breakfast. The biscuit dough is slightly salty which makes for a nice contrast with all the cinnamon and sugar.

Pink Stuff

A long-time family favorite. I guess you could classify this as a Jello Salad, but we've always just called it "Pink Stuff". There are tons of variations on this as well (Included as a note).

Rick-gu (spaghetti sauce)

This is my step-dad's best spaghetti sauce. He calls it Rick-gu, which always makes me laugh. It is absolutely delicious for use in any marinara or meat-sauce dish, such as lasagna. My favorite is over whole wheat spaghetti noodles.

Rick's Best Meatloaf

This is my step-dad's meatloaf and it's by far my favorite. You can add whatever herbs and spices you like, but I prefer a little Italian seasoning in mine.

Granny's Mac and Cheese

This is my all-time favorite mac and cheese recipe. It's been in my mama's family forever. I usually eat this as a main dish and add a green vegetable or salad to complete the meal.

The traditional version is loaded in butter, milk and full-fat cheese. I've lightened it up by using whole wheat noodles, as well as lower fat and calorie ingredients.

I also use cheese slices on top instead of shredded cheese, as it melts onto the top of the mac easier and more evenly. If you'd like less cheese on top, reduce number of slices or go for shredded cheese instead.
