Super fast, tasty and filling!
This tofu is quick, and dang delicious. Calculations are for 2 servings (half a block of tofu per serving).
I've adapted the recipe from the Looneyspoons Collection book -- the original calls for mild sausage, but I like spicy, zucchini (which I switched for celery and spinach) and croutons instead of buns but I used what I had and loved it.
A simple chicken stir-fry, great over rice or just on its own!
This is delicious on lettuce for a salad, or with toasted whole wheat bread. The serving is very large! The kidney beans make up for the lack of mayo.

Serve with steamed rice.
Our fridge broke so I essentially threw together everything that hadn't gone bad! Delicious.
