A delicious soup can be made without the scallops
This recipe is for a serving for one person, e.g. 4-5 oz of meat. It will jazz up any chunked protein when you don't know what to do with it. When sauteing any kind of chunked meat, poultry, or shrimp, with onion, mushroom, peppers or just meat: add these ingredients to the pan at the end just before serving.
Look for Vietnamese Pho Beef Broth seasoning mix in your international Asian supermarket.
My take on low fat Pho
Can also sub chicken, low fat sausage, turkey bacon. Eat by itself or serve over 1/2 c rice.
I use this in place of rice, potato, hash browns, even top it with my spaghetti sauces. Also good to stir in to other vegetable dishes and stews soups for added flavor and fiber.
