This ratatouille is so amazing...hearty, healthy, very low-cal, lasts for days, one of my faves.

**I think the nutritional info might be slightly high...the book says 1 serving is 143 calories. Maybe it's the olive oil...you probably don't need a whole 1/4 of a cup to saute everything.**
