German Country Style Rib Dinner (my version)

This is a recipe from a fellow Sparker that I changed just a little to suit my families needs. It's only a little different.

This is a great recipe because my husband LOVES pork. We often buy the country style ribs when they go on AWESOME sales. However, I am tired of having bbq ribs. I thought this sounded awesome. It's a great way to get him eating healthier and still enjoying his pork at the same time. He also loves German food (especially things with sauerkraut)!!

This is a husband pleaser for me!!

Roasted Vegetable Couscous

This is a very delicious side dish or meal! I absolutely loved it. It was a great creation and I plan to make it again! I hope you all love it as much as I did. Healthy comfort food!

Black Bean & Sweet Potato Topping

This is actually from a SparkPeople recipe that I changed slightly. It had chicken in it but since not everyone in the family eats the same portion of meat I didn't want it precalcuated in b/c it wouldn't be accurate.

This is great served with brown rice. I'm serving it over chicken with brown rice and using the leftovers with just rice.

Loaded Quiche

My very own quiche creation! Yummy!

After trying quiche for the first time this week and loving it, I thought I'd create something yummy and unique that helps me get my veggies and protein in too!!

Chicken, Black Bean & Rice Soup

This is a yummy way to get in your carbs, protein, some veggies and a load of flavor. Filling, too! If you want fat though, you're gonna want to add some olive oil or something. This recipe is virtually fat free @ less than 12 fat grams for the entire recipe which makes about 6 fairly large size portions! Vegetarians just use vegetable broth and omit the chicken and add a few more beans! :-)

This is delicious but there are definitely some corners to be cut to make this healthy. My husband made it while I was at work so I didn't have a choice but I could've eaten less. LOL.
