After looking at several recipes and ingredient lists, I came up with this combo. I like to put it on a sandwich thin and broil it for few minutes. Yummy!
I got this from a cooking blog. I will try to update with the blog's name as I can't remember.
Note: the nutritional value has been calculated for a whole breast which is about 6 oz each.
I make the rice on the side so it is carb friendly for me but my fiance and kids can still have it. I also used beef sausage so this could be much healthier with turkey. I didn't have celery so i didn't use it, but you could a couple of stalks and it will enhance the flavor more.
I have a friend that makes the most awesome cheesy potatoes. I am trying the South Beach Diet and decided to try this with cauliflower. I don't think I'll ever have it with potatoes again! I would use 2 heads of cauliflower instead of 1. Usually I use a whole bag of frozen hasbrown potatoes to a tub of sour cream, but the cauliflower did not yield as much as the potatoes. Also, my friend usually used a can of cream soup to make it creamier, but I just used a couple of tablespoons of cream instead to keep carbs down. I will be revising this for be lower in calories and fat next time.
I adapted this recipe from one of Rachel Ray's shows to what I had on hand. Altogether it took about 20-30 minutes. I got about 5 servings out of this.
I tried something slightly different and FH loved the little extra the barbeque sauce adds.
Using low fat or fat free cheese and turkey will cut the fat in this recipe. Low sdium tomato soup will also lower the sodium content. I was using up items we got on sale.
I got this recipe from a friend, but I tweaked it to make it a bit healthier since we can eat so much of them! I would typically use the Fage 0% fat but accidentally grabbed the Total which has a lot more fat. Can cut fat with fat free sour cream, yogurt & cheese.
I got this off of the the blog Bites and Bowls. Delicious! I added more cheese and a little more mayo.

This recipe has been adapted from the Eating for Life cookbook that follows the Body-For-Life plan.
I cut the pork and soak the chiles the night before and then prepare as directed in the morning. You can also cook in a dutch oven for 2 1/2 hours.
Do not be afraid to stuff the eggplant with the mixure - its ok if the eggplant is a little open, it will not fall apart when it bakes. Just be sure to put it open seam DOWN. I ended up with about 20 rolls and divided them 4 per serving.
A yummy dinner for one. Daisy light sour cream and 1/5 tbsp of La Victoria Red Taco Sauce is figured in to the nutrition.
The ingredients in my list are the ones I used to figure the nutritional info, so it will vary a little with different products.
I call this "lazy" because it skips the steps of dipping and coating. Still healthy and delicious!
*Note: I am not sure if the nutrition reflects 0% fat greek yogurt or regular.
I made my own version of a "cream sauce". Typically it is made of flour milk and sour cream. I subbed greek yogurt for the sour cream. Also, I didn't use the flour, but you could to make the sauce thicker (my sauce was thin). I also used butter buds but it is not factored in to the nutritional info because I could not find it. I think it may be like 10 cals per tbsp.
