Chocolate Chocolate chip Muffins

Whole Wheat muffins sweatened with honey and brown sugar are a delight and the little ones eat them up.

Sticky Ginger Noodles

These are great with Ginger Chicken or with Shrimp, stir fried beef, etc.

Ginger Chicken

This is a recipe that is very versatile. You can replace the sugar with Splenda and it taste the same. Use low sodium soy sauce. Add other veggies. My husband likes zucchini so I almost always cook that in the recipe. I added squash because I love it. My children love the chicken and I serve this over ginger noodles, which is whole wheat spaghetti noodles cooked by directions and then I cook a separate pot of sauce and then put noodles in and toss with sesame seeds.

Flaky Chicken

This is not low fat because of the chicken legs, but you can substitute chicken breast, I have two little boys who love chicken legs so that is better for my family (and they are cheaper).

Pam's Pancake Surprise

This is a half and half pancake recipe using both whole wheat and white flour. I have found that using all whole wheat makes the pancakes too grainy. My sons love chocolate chips in theirs and I love blueberries in mine. But you can add whatever you like to the batter and throw it on the griddle. I use a non-stick griddle so there is no need for butter or oil on the pan to prevent sticking. The pancakes come out fluffy, light and yummy.
