I changed the original recipe a bit to please our own tastes and to make it more diet friendly. You may like to use even more diet friendly ingredients to bring down the calorie count even more.
This is a delicious and filling soup. It can be used for lunch, along with a salad; or it can be used for supper with a quesadilla, salad, and fruit for dessert.
This has become a favorite side dish at our house. It's great with chicken, pork, fish, and even eggs.
