Sweet potato tofu curry

Chunks of sweet potato and tofu in a creamy tomato-coconut curry sauce form the base of this versatile recipe. In addition to this, throw in whatever veggies you have on hand. I change it up all the time and I have found you really can't go wrong!

Jalapeno-lime hummus

Tangy and spicy, great with nacho chips and salsa or on a burrito instead of sour cream.

Baked falafel crust

This falafel dough is spread thinly (1/2" - 3/4") and baked like a large cookie in the oven. It is very versatile and can be used as a crust for canapes, sliced up for sandwiches or salads or even as a crust for pizza with interesting toppings like feta cheese, daiya, olives, roasted red peppers etc.

Chocolate banana baby muffins

These are made with iron-fortified baby cereal and spelt flour. They contain no egg and no milk so they are suitable for babies who are eating solid food. I break off tiny pieces for my toddler to pick up with her fingers.

Lentil Burgers

These are a little time consuming, but this recipe makes a big batch, which makes the work worthwhile. And they are yummy as burgers, on a salad or stuffed in a pita like falafel.

Super Cookies! (Vegan, Gluten-free)

If you are ok with wheat and gluten, you can make these with whole wheat all purpose flour and they come out really nice as well. I substituted the whole wheat flour for Bob's Red Mill gluten free all purpose baking flour to make them gluten free. You may want to buy certified gluten free oats as well if you are true celiac or extremely sensitive to gluten.

Vegan oat bran pumpkin muffins

I add chocolate chips but they are optional, substitute raisins, pumpkin seeds, nuts, or just leave them out.

Samosa-style burrito filling

I love samosas and wish I could have them everyday, so I made this recipe for a burrito filling that tastes like samosa filling. Just roll the warm filling inside a wrap like a burrito and eat! It isn't deep-fried like samosas are, and it has sweet potato instead of white potato. Canned sweet potato makes this quick but you could easily sub in cooked fresh sweet potato instead if you have time, you'd need about 2 cups.
