This coleslaw is tasty & low in calories and fat. It's easy because I start with a bag of coleslaw mix that's ready to go! By substituting a large portion of the normal mayo with fat free plain yogurt, you keep all the yummi-ness with none of the guilt! I swapped the normal vinegar for tangy Dijon mustard, because I prefer the taste. I added sunflower seeds for an extra bit of crunch and nutrition!
Veggies for breakfast?!? I love pancakes so I'm constantly looking for ways to eat them without just simply eating empty calories! I came up with this recipe as a way to use up leftover sweet potato from Christmas dinner! They are excellent! Light, Fluffy & easy to make! Great for weekend breakfast, I make the batter & store leftover batter in the fridge for later, batter is good in the fridge for up to 5 days. (pictured with blueberry sauce)
This soup is hearty and delicious! I always keep the ingredients on hand for it! It's fantastic to freeze and only gets better the day after it's made!
