Comfort food. This is a modified recipe that I got out of a Tolkein book. It's Hobbit food, so you know it's good. ;-) High in zinc, potassium, and b-vitamins!

I found the recipe for these cookies in a book of pretty healthy recipes called Olive Oil Baking. The recipe calls for Sesame seeds and lots more Sunflower seeds, but I ran out, so I skipped the Sesame seeds altogether and used flax seeds for the remainder of the Sunflower seeds (which the book suggested) and they're delicious! I was also a little low on brown sugar, so I added some agave nectar and it worked out beautifully. The tinge of cocoa powder was also my own addition. I was craving chocolate. :D My husband LOVES these cookies and he doesn't like anything healthy.
They're SO easy and they're not too sweet, which I love. You don't need a mixer, just 2 bowls, a whisk and a spoon.
To lighten them up even further, you could probably substitute even more of the brown sugar with more agave nectar. I can tell that dried fruit would also go nicely in these cookies and add some sweetness (maybe giving you the opportunity to cut back on some more brown sugar). Give it a shot and tell me what you think!
If I tell the truth, I usually drink it all myself. I love the taste of plain veggies, but my husband isn't so cracked about it. Sometimes, I can get him to take a sip.
This has a clearly "Low Sodium V8" taste, which I love.
If you like that, I think you'll like this juice.
It's packed with Potassium (which I find difficult to get in my diet), fiber, and Vitamin A. There's a healthy portion of Magnesium (which is also difficult for me to get), and a good shot of Vitamin C and Folate.
This dessert is a delicious, nutritious alternative to ice cream, with healthy mono and poly unsaturated fats, fiber, protein, potassium, Vitamin C, Maganese, and Calcium.
It's completely cured me of my need for ice cream!
Makes one serving of potassium, protein, Vitamin A and fiber rich delicious salad!

This tastes best with vegetable broth. I make home made in minutes, using veggie scraps.
I am currently recovering from surgery, and all I want is weak chicken and rice soup. Thinking ahead, I'd made a HUGE pot, and it's delicious.
NOTE: If you prefer it stronger, delete some of the water.
