Banana-Nut Oat Bran Muffins

Quick, easy and great for those trying to reduce cholesterol.

Batter is very thin once mixed together but the oat bran soaks up a lot of that in the baking process and keeps the muffins nice and moist.

Turkey Ossobuco (Gourmet/March 2007)

This play on ossobuco forgoes veal for the dark meat of turkey legs. A vibrant gremolata made from lemon and orange zest and fresh parsley offsets the richness of the meat.

This delicious gluten free, lower sugar, lower glycemic carrot cake was published in the NY Times by Martha Rose Shulman. Try it. Itís fantastic!
This crunchy, spicy carrot cake is light and less cloying than most. Itís
important to grate the carrots on the fine hole of the grater, or else they will remain too crunchy. For best results, wrap the cake tightly in plastic after it cools and serve it the next day. It will keep for five days in the refrigerator if wrapped airtight
