This dish is FABULOUS!! I was totally expecting it to be crazy high in calories, but I was pleasantly surprised when I plugged it in to the recipe calculator :o) Using reduced fat sour cream and margarine instead of regular sour cream and butter reduces the calories by about 30 per serving.
You can substitute 1 cup of chopped cooked chicken for the can of chicken in this enchilada recipe.
