Peel and cube sweet potatos, peppers, onion - mix with oils and spice and bake at 425 for 20 (or until done)
Drain can of black beans, chop cilantro - put aside
When vegetables are done, let them cool for a bit
Mix vegetable mix, black beans, cilantro and lime juice together.
Spread mixture in the centre of 6 tortillas
Fold all sides in
Place folded side down in baking pan sided by side.
Bake at 350 for 15 minute (pan can be sprayed with Pam)
Done in crockpot - mix coconut milk and red curry paste (1.5 tbs) together and pour into crockpot. Cut up chicken, peppers, onions into cubes and add to crockpot, I added pineapple for one hour at the end but can be added at beginning as well
Looking for something crunch I experimented with chick peas. These are crunchy and spicy and are a healthy alternative to chips
Preheat oven to 350/Prepare Pan - dry ingredients are mixed in 1 bowl, the wet in the other and mix together at the end. You need to cut it thin to get 18 slices but it is rich, so a thin slice is nice.
