I don't remember where I originally found the recipe. This has become a summer staple. Serve with burgers for a cookout or toss with some leftover chicken for a summer evening supper.

I made some changes to take the down the fat and calorie count.

This is a really clever recipe for chocolate brownies, which uses blended stewed prunes and contains no butter, so works out relatively low in fat and calories.

In total the recipe makes 500g of candied nuts; or 25 - 20g servings. Not a huge amount but a little somthing sweet and crunchy to go with coffee instead of a cookie over the holidays. Healthier for you too than cookies.

Instead of doing one family sized empanda like the spanish would, I've made 12 individual portions South American style to help me with portion control.
These will take some time so make them on the weekend for weekday lunches.
You can make both the pastry and filling a day ahead.
Inspired by perfectly4given's excellent recipe but using real sugar and eggs. I prefer to use whole foods.
Over ripe pears work well as a substitute for the applesauce and roasted butternut squash in place of pumpkin (this recipe is calculated with applesauce and pumpkin).
Based on a waitrose recipe but modified for lower calories and fat.

I've use homemade spinach lasagne noodles, so have not included the pasta in the nutiritional information for this recipe.
Great for lunches or as a simple summer supper. You could replace some of the basil for oregano and turn it into a greek delight.

Apparently a British classic, which tastes like honey. Just tried it myself for the very first time today. UKTV food. Makes 4 cups for 64 1-tbsp servings.
A cooking.com French classic recipie with a few changes. While the crust is delicious, I can never manage to handle it so have taken to just pressing it into the pie form for the base and crumbling it on the top.
French classic. A warm bacon vinegrette served over crispy greens. Pretty enough for a dinner party or great as a main with crusty bread for a summer supper.

I love this Salad for BBQ or Potlucks. We'll also use it with a Chicken breast to replace dinner. Great flavours.

Use a ready made salsa to speed things up. Broccoli is a favoriate accomaniment with nice fresh bread for us with this meal.
Hears an idea to use left over butternut squash. Simply skip step one, if using left overs.
Use what ever you have on hand, fresh or frozen berries, apple, orange or cranberry juice. Quick and Simple
