Got this recipe from Canadian Living and over 800 people added it to their recipe boxes. It has been reworked here with some healthier flour and with Splenda. It also uses raisins rather than nuts due to allergies in our family.
The secret to this delicious pie is fresh spices! Everyone I've served it to comments that they don't miss the crust at all and that it's one of the best Pumpkin pies they've ever had. (Perhaps that's because I usually use pureed roasted butternut squash instead - it's cheaper!)
I freeze these in ziplocs so that I don't eat more than one a day! Though they're high in carbs, they're also high in fibre and contain lots of fruit...so I figure they're a healthier treat than a slice of chocolate cake.
Fabulous way to use up Christmas or Thanksgiving leftovers!
Basically "Kristin's Banana Chip Muffins" reconfigured with Splenda and some additional rising agent.
