I changed the pecans to walnuts & swapped out butter for SmartBalance Spread
The same as my other Calavaza receipe, but without the meat. Eat this as a side dish. You could add tofu for protein or as amain dish.
This is a tasty winter favorite. It uses summer squash, but that's just because I live in South Texas & it's available year round. You can add or remove veggies as you desire, it's still yummy. You can also change the meat, or remove all meat for a vegetarian version.
Green chili enchiladas using whole wheat tortillas, low fat cheese & ground turkey. Very yummy.
