I have not tried it, but I think you could probably use the olive oil mayonaise that is out on the market now.
This dessert fruit salad is made for special occassions as it is very rich. I will make it next time using reduced calorie/fat products to see if there is a taste difference in recipes. I know from past experience, there is no difference in the texture. The nutritional values are calculated without the coconut, as I do not like it, lol.
Lots of crunch in this one
Makes 4 servings, generous 2 cups each
I make this, measure it into 1 1/2 cup serving dishes and freeze it. Lasts me awhile.
This is delicious with a grilled chicken breast (not calculated in nutritional information).
