Simple crock pot/slow cooker meal. Easily modify with ingredients on hand and preferred seasoning. Nice comfort food for a cold day. I love using my left over roasted chicken this way.
Modified recipe from allrecipes.com to add some flavor and reduce density. Think recipe would also be good with some finely chopped fresh apple (maybe 1-2), raisins and/or dried apples. Also think might be good substitute lemon extract for vanilla and add 2-3 tbsp poppy seeds. Alternatively, use 1/2 tsp lemon extract and finely grated lemon rind from a small lemon (with the poppy seeds).
For me, this is a catch all recipe for my current left overs. Modify for your taste and ingredients.
