Very simple way to prepare beets. My garden is bursting with sage right now so I added some fresh sage in the last part of roasting and it paired nicely.
This is a great low carb high protein meal. I like to serve it in romaine lettuce leaves for a wrap or on top of a bed of greens.

Those times that I am craving something sweet & have some carbs to spare I will whip this up.
There are many variations of this out there on the web. This is how I liked to make it.
Adapted from a vita-mix recipe. No sugar and dry mustard used instead of dijon.

Recipe adapted from a food network recipe, they use vermouth and thyme. I didn't have either so I adapted it to work with what I had. Very tasty dish. Would be great with chicken broth as well.

I make it with gluten free rice bread but you can use any kind of bread you like for breadcrumbs.
Sometimes I use dried herbs I just cut the amount in half.

A wonderful curry soup for all seasons. I've been known to eat it cold on a hot summers day. This is soup is great for vegetarians, vegans, those that are df, corn free, soy free, gluten free, wheat free.
A wonderful grilled curry chicken recipe.
Recipe has serving as 4oz of chicken per person, of you want to have 3oz it will serve more.
I used a 3.5lb whole roasting chicken and I removed all the skin. I couldn't find the option to select it, so I believe the fat content and calories are lower. Could also use boneless skinless chicken breasts. Great as is, would make a great taco or enchilada filling.
Great as a side dish or as a burrito filling. Can add a can of kidney beans for a main course meal.
